Here is a non exhaustive list of sip servers or service providers. I've made this list to help people to find
SIP services on the web. I did not tested that linphone was working fully with all of them. Use at your own risk.
Those proxies can achieve different functions, sometimes simultaneously. Briefly, they can do:

Registrar: allows to have a public sip address (ex: sip:roger@someregistrar.org ). It is especially
usefull for all people using dynamic ip addresses.

PSTN gateway: allows to call a normal phone from a SIP phone and vice-versa. Usually this kind
of service can't be free everywhere since the PSTN network isn't free.
- Presence server: allows to see presence information about your friends.
For most of them you need to sign-up on the website before using the sip server.
Here's the list:
- sip.antisip.com : this little french company created by libosip's author runs a free registrar on sip:sip.antisip.com. This proxy relays video !
- iptel.org : registrar, maybe PSTN gateway ?
- FreeWorldDialup : registrar, PSTN gateway
- le5.com : a french sip provider; allows registration and PSTN gateway
- RealTunnel : free SIP registrar
